You’ll need these ingredients:
- Coconut oil for baking;
- One egg;
- Buckwheat flour;
- Gluten-free baking powder;
Buckwheat cookie recipe:
In a bowl, beat the sugar and softened coconut oil together, add the egg (or flax egg) and mix until combined. Add buckwheat flour, baking powder, and salt, and mix well until you get homogeneous cookie dough.
Preheat oven to 350F (180C) and line a cookie sheet with parchment paper.
Form balls. Take 1 heaping teaspoon of dough per ball and roll it between the palms. You should be able to get approximately 10-12 cookie balls. Place small balls of dough on the prepared cookie sheet.
Press down the balls with your fingers and flatten them slightly.
Bake a delicious cookie for 10-15 minutes. If they well-cooked a bottom should become golden brown.
